Cơm nấu đậu kiểu Ý (Risi e Bisi) là món ăn ngon đặc trưng của nền ẩm thực Ý, được nấu từ gạo với đậu xanh hoặc đậu Hà Lan. Để có được cơm Ý ngon chuẩn vị, bạn phải chú ý cả mức lửa lẫn lượng nước. Làm sạch tỏi và hành tây. Băm nhỏ lá bạc hà và cần tây cũng như phô mai Parmesan, cho tất cả ra ngoài để riêng. Đun nóng bơ trong nồi với lửa vừa và xào thơm hành tây, tỏi băm, cần tây trong 2-3 phút. Cho gạo đã vo sạch vào xào với lửa nhỏ trong khoảng 5 phút. kế đó cho rượu và chút nước dùng rau củ vào. Xào đến khi nước thấm vào gạo thì cho đậu Hà Lan vào.
Rót thêm nước dùng rau củ vào sao cho vừa xâm xấp mặt gạo. Đun gạo với lửa liu riu và thường xuyên đảo đều cho đến khi gạo nở và không thấy nước dùng nữa thì cho hết nước dùng vào.
Ngay khi cơm vừa chín thì bạn cho phô mai Parmesan vào và nêm thêm muối cùng tiêu. Đậy nắp nồi và cho cơm nghỉ khoảng 5 phút. Khi ăn bạn múc cơm ra đĩa, ăn kèm ít phô mai, lá bạc hà và dầu olive.
